Namul (Watercress Salad)

The Korean salad-relish, called Namul, may be made with various vegetables. It is usually flavored with such things as green onion, soy sauce, red chiles, and sesame, all found in this recipe.

2 bunches watercress
2 small green onions and tops, chopped
¼ teaspoon pepper
¾ teaspoon salt
1 ½ teaspoons sugar
2 tablespoons vinegar
1 dried red chile (about 1-inch long), crushed
1 teaspoon crushed toasted sesame seed

Wash watercress; drain, then cut into 2-inch lengths. Mix together the green onions and tops, pepper, salt, sugar, soy sauce, vinegar, and crushed chile. Pour over watercress, then sprinkle with sesame seed. Chill for 1 hour, if you like, but server at room temeperature.

Note:
If you prefer milder dressing, let the whole chile stand in the dressing for 1 hour, and remove it before dressing the greens.
