Fish (Dorado or Corvina)
Lime or Lemon Juice
Salt and Pepper
Hot pepper, crushed (Charrapa)
Cut fish into bite-size pieces; dip in boiling water, or put in strainer and pour boiling water over it.
Soak pieces of fish in lime juice with salt and pepper. To keep juice from becoming cloudy, you may want to change juice, adding more; add remaining ingredients. Submerge all under juice, and store in a sealed container for several hours. Serve with boiled potatoes on a lettuce leaf.
