The egg white helps the breadcrumbs adhere to the okra and also makes a wonderful crust.
1 pound fresh okra, cut into ½ inch pieces
3 tablespoons all purpose flour
2 egg whites
1 ½ cups soft breadcrumbs — I use plain Progresso crumbs
vegetable oil
¼ teaspoon salt
Combine okra and flour tossing to coat — I use a colander for this. Set aside. Beat egg whites in large bowl until stiff peaks form. Fold okra into egg whites, stir in breadcrumbs coating okra well. Heat about 2 inches of oil in skillet, fry okra until golden brown — don't over cook. Drain on paper towels and sprinkle with salt.
