2 tablespoons bacon fat
1 large onion, sliced into rings
½ green pepper, chopped
2 cups canned tomatoes
1 teaspoon salt
1 dash freshly ground pepper
1 teaspoon lemon juice or grated rind
1 pound fresh okra, cut into 2 inch pieces
¼ cup flour
½ cup grated cheese
Heat fat in medium skillet, and brown onion and green pepper. Add tomatoes, salt, pepper and lemon juice. Simmer 15 minutes.
Dust okra with flour. Heat oil in another skillet. Add okra. Cook until heated but not brown, reduce heat, and pour sauce over okra. Add grated cheese and cover. Simmer 15 minutes.
