1 pound Velveeta Cheese or other processed cheese, cubed
2 cups mayonnaise, or salad dressing
2 pounds frozen hash brown potatoes, defrosted about 15 minutes
½ pound bacon, cooked and crumbled
Preheat oven to 350°F. Melt Velveeta in heavy pan over low heat, stirring. Add Mayonnaise and potatoes to cheese and mix well. Put into a 9 by 13 inch shallow baking dish and top with bacon. Bake, uncovered for 35 to 40 minutes until bubbly and golden brown.
