Servings: 4
1 ½ pounds red new potatoes
¼ pound crab meat
2 tablespoons chives, minced
1 tablespoon parsley, chopped
1 teaspoon olive oil
2 tablespoons nonfat mayonnaise
2 tablespoons nonfat yogurt
2 teaspoons lemon juice
3 tablespoons Parmesan cheese
Bake potatoes in a 350°F oven until tender, 30 to 45 minutes. Let cool. Cut into quarters. In a bowl, combine all other ingredients. Stir in potatoes. Place into a shallow baking dish. Broil 4 inches from heat until golden. Serve hot
