Recipe from: The Popular Potato
Servings: 6
4 medium potatoes, peeled
3 slices bacon, diced
butter or oil for frying
1 onion, sliced
1 tablespoon chopped fresh oregano
Parboil potatoes (or microwave on HIGH for 5 minutes). Cut into medium thick slices. Fry bacon until fat is transparent. Add butter and fry onion and potato with bacon, turning until browned. Sprinkle with oregano.
