My friend Jon's awesome mashed potatoes. Excellent with a grilled steak and asparagus.
1 yellow onion, diced
2 small shallots, minced
4 garlic cloves, minced
4 tablespoons butter, divided
3 pounds potatoes — red or creamer potatoes are best
salt and pepper
2 teaspoons horseradish
Sauté the onion, shallots and garlic in 1 tablespoon butter until starting to caramelize. In the meantime boil potatoes until soft. Drain and mash the potatoes with a mixer or potato masher. Add the remaining 3 tablespoons butter until melted. Add the onion mixture. Start adding milk until the potatoes are the right consistency. Taste for salt and pepper and add the horseradish. Taste and add more butter, salt and pepper, or horseradish as needed.
