Servings: 6 to 8
2 medium carrots
5 medium potatoes
butter or margarine
milk
Velveeta cheese, cubed
salt and pepper to taste
Boil carrots and potatoes together until soft for mashing. Drain, mash together. Add butter and milk. Whip until smooth, add cheese while whipping. You can add as much cheese as your family likes. (Can be prepared ahead and heated in oven or microwave.)
