2 ½ cups cubed, cooked potatoes, mashed
3 tablespoons milk
2 tablespoons margarine
1 tablespoon chopped chives
½ pound Velveeta pasteurized process cheese spread, cubed
¼ cup grated Parmesan cheese
Combine potatoes, milk, margarine and chives; beat until fluffy. Stir in half of process cheese spread. Spoon into 1 quart casserole; sprinkle with Parmesan cheese. Bake at 350°F for 20 to 25 minutes or until process cheese spread begins to melt.
