1 envelop Lipton vegetable recipe soup mix
4 cup hot mashed potatoes
1 cup shredded Cheddar or Swiss cheese, about 4 ounces
½ cup chopped green onions, optional
1 egg, slightly beaten
⅛ teaspoon pepper
Preheat oven to 375°F. In lightly greased 1 ½ quart casserole, thoroughly combine all ingredients except ¼ cup cheese. Bake 40 minutes. Top with remaining cheese and bake an additional 5 minutes or until cheese is melted.
Note:
Do not use salt when preparing hot mashed potatoes.
