Servings: 2
2 cups potatoes, diced, boiled, and drained
2 cups white sauce (see recipe below)
salt and pepper
shredded mild Cheddar or Swiss cheese
buttered bread crumbs
Combine potatoes, white sauce, salt, and pepper. Pour into a greased shallow baking dish. Sprinkle shredded cheese over potatoes the top with buttered bread crumbs. Bake at 425°F for about 20 minutes, or until nicely browned.
White Sauce
Servings: About 2 cups
4 tablespoon butter
4 tablespoon flour
2 cups milk
2 tablespoon heavy cream
½ teaspoon salt to taste
¼ teaspoon white or black pepper to taste
Melt butter in a saucepan over low heat; stir in flour. Cook for 3 minutes, but do not brown. Stir in milk and continue cooking over low heat, stirring constantly, until sauce begins to thicken. Season with salt and pepper. Add 2 tablespoons of heavy cream for a richer sauce.
