Volcanic Potatoes

This is a recipe I fondly remember from my childhood . You don't have to be a kid to enjoy it. It looks great too.

6 medium potatoes cooked
1 cup evaporated milk, or a bit more if needed
1 teaspoon salt
⅛ teaspoon pepper
2 egg yolks beaten
2 tablespoon butter or margarine melted
¼ cup evaporated milk
½ cup grated cheese such as American cheese or other mild cheese, or more to taste

Peel cooked potatoes and mash in the hot drained pan they were boiled in. Mash in pan thoroughly and then beat fluffy adding milk for your favorite desired consistency. Season with salt and pepper. Heap mixture in a greased pie plate or baking dish. Make a crater in the center the size of a custard cup. Mix yolks, milk and margarine and cheese and salt and pepper to taste. Pour into the crater. Bake in a very hot 450°F oven until the topping browns, cracks and runs down the side of the potato volcano, about 15 minutes.
