Recipe from: Louise Austin
This recipe is from my aunt, Louise Austin, from the cookbook, What's Cooking with FLO?, favorite bayou country recipes of FLO (For Ladies Only) from the First Baptist Church in Napoleonville, Louisiana published in 1990.
1 pound carrots
1 teaspoon salt
1 cup sugar
¾ cup vinegar
1 can tomato soup
½ cup corn oil
salt and pepper, to taste
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1 onion, chopped
1 medium pepper, chopped
8 ounce can corn
Boil the carrots in salted water until tender; drain. Combine other ingredients and pour over carrots in covered container and marinade overnight.
