I created this by combining ideas from several different recipes and it turned out great! Maybe you could even add in some walnuts for crunch?
For the Dressing:
4 tablespoons olive oil
1 tablespoon honey
1 tablespoon balsamic vinegar
2 tablespoons fresh lemon juice
¼ cup finely diced shallot
1 teaspoon peeled and grated ginger
Combine olive oil, honey, balsamic vinegar, lemon juice, shallots and ginger. Mix well and place in the refrigerator in a sealed container for later.
For the Salad:
2 cups watermelon balls
3 cups fresh spinach
2 tablespoons fresh mint or 2 tablespoons basil
½ cup feta cheese
salt and pepper
When ready to serve, prepare the salad by combining the watermelon, spinach, herbs and feta cheese. Add the dressing to taste. Toss and then add salt/pepper to taste. Serve right away.
