Recipe is from Le Cordon Bleu 'Cuisine Foundation 2011' book.
salt and white pepper, to taste
1 ounce red wine vinegar
½ ounce Dijon mustard
5 ounces vegetable oil
2 garlic cloves, minced
⅛ cup fresh chervil or ⅛ cup fresh parsley, minced
2 shallots, minced
Dissolve the salt and pepper in the vinegar and whisk in the Dijon mustard. Gradually incorporate the oil in a steady stream, whisking continuously until thick. Mix in the chopped garlic, chervil and shallots.
