Spinach, Orange and Onion Salad

This is a very tasty, refreshing not overly sweet salad.

1 large pkg of fresh spinach, cleaned and tough stems removed
1 11 ounce can or mandarin oranges, drain and reserve juice
2 tablespoon fresh chopped red onion
2 tablespoon roasted hulled sunflower seeds
¼ cup olive oil
1 teaspoon sugar
salt and pepper to taste

Hand tear spinach leaves if needed and place in salad bowl with onion , sunflower sees and drained oranges. To the drained orange liquid add the olive oil and sugar and salt and pepper to taste. When ready to serve, toss dressing into salad and serve immediately.

Note:
If desired for a sweeter salad , one may add golden raisins or other dried fruit such as dried cherries for taste and color.
