Tuscan Tuna and Bean Salad

Servings: 4

3 ½ cup cooked small white beans
2 chopped tomatoes
6 ⅛ ounce canned tuna well drained
3 tablespoon fresh lemon juice
3 tablespoon wine vinegar
2 tablespoon olive oil
3 tablespoon fresh basil chopped or parsley
1 clove garlic crushed
2 scallions chopped
¼ teaspoon salt
¼ teaspoon black pepper

In a medium bowl, combine cooked small white beans, chopped tomatoes, well-drained solid white tuna, fresh lemon juice and wine vinegar, olive oil, chopped fresh basil or parsley, garlic clove, crushed through a press, chopped scallions, and salt and freshly ground pepper. Toss gently to mix. Serve at room temperature or slightly chilled.
