Salad and Salad Dressing Recipes

Master Vinaigrette for Fruit Salads

Recipe from: The Seattle Time
Servings: About ½ cup

3 tablespoon fresh orange juice
1 tablespoon accent juice or vinegar of your choice1
½ teaspoon granulated sugar
¼ teaspoon kosher salt
Accent spice or herb of your choice
2 to 4 tablespoons oil of your choice2

In a small bowl add the orange juice, accent juice or vinegar, sugar, salt and spice or herb; whisk until the sugar and salt have dissolved. Whisk in the oil a few drops at a time until dressing is creamy and emulsified. Taste and adjust ingredients to make vinaigrette zesty and well balanced.



1 Good choices for the accent juice are lemon, lime, tangerine, grapefruit or pomegranate juice. Vinegar choices include balsamic, sherry, apple cider, rice, white wine or raspberry.
2 For the oil, try canola, grapeseed, fruity extra-virgin olive oil, walnut, hazelnut or other nut oil.
