3 ripe tomatoes
½ cup crumbled feta cheese
1 tablespoon oregano
For the dressing:
¼ cup olive oil
1½ tablespoons vinegar
½ to ¾ fresh minced garlic
¼ teaspoon each sugar, salt, mustard.
Arrange in 4 individual bowls the slices of tomato, divide the feta cheese and sprinkle over the tomatoes. Sprinkle the oregano over the tomato/feta cheese. In a jar with a lid, mix the dressing ingredients and pour gently over the tomato/feta/oregano. Serve.
