Recipe from: Cafe Iguana, Denver, Colorado (from Bon Appétit)
3 cups tomato, chopped
¾ cup cilantro, fresh, chopped
3 tablespoons lime juice
1 ½ tablespoons chipotle chiles in adobo, chopped
1 ½ teaspoons cumin, ground
Combine all ingredients in medium bowl. Season with salt and pepper.
