Servings: 2 to 2 ½ cups
8 plum tomatoes, seeded and chopped
6 green onions, sliced
¼ cup cilantro, chopped
½ teaspoon ground black pepper
2 tablespoons olive oil
¼ cup balsamic vinegar
1 teaspoon salt
In a bowl, combine the tomatoes, green onions, cilantro, pepper, olive oil, balsamic vinegar and salt. Wrap the bowl with plastic wrap, place in refrigerator, and chill for 1 hour.
