Recipe by: Niki 1 cup Maui Pineapple, diced into ¼ inch pieces Combine all ingredients except the cilantro and boil for 2 minutes. Cool and add cilantro.
1 cup sugar
1 cup rice vinegar
2 teaspoons ground chili paste (such as Sambal Oelek)
1 pinch kosher salt
1 shallot, chopped fine
2 cloves garlic, chopped fine
1 tablespoons cilantro, chopped (or parsley)
