5 kiwi fruits, peeled
1 ripe mango, peeled
¼ cup mint leaves, chopped
2 tablespoons cilantro, chopped
In a food processor, combin 3 of the kiwis and half the mint. Purée and pout into a large mixing bowl.
Chop remaining kiwis to a small dice and add to bowl.
Working over the mixing bowl to reserve as much juice as possible, carefully remove the mango from its stone. chop fine and add pulp to the kiwi mixture.
Add remaining mint and cilantro, stir well, cover tightly and refrigerate for at least 2 hours before serving.
