Recipe from: Le Ann Nienow
3 long green anaheim peppers, use pepper and seeds, take out seed pod
2 fresh yellow peppers, remove seeds and mince
6 or more medium tomatoes
1-2 medium red onions
2 green onions
1 garlic clove, minced
Chop and mix all of above.
Add:
1 tablespoon Rice Vinegar
1 tablespoon Fresh Lime Juice
1 teaspoon Sugar
1 teaspoon Olive Oil
¼ to ½ cup Minced fresh cilantro leaves
Salt to taste
