Servings: 4 cups
4 plum tomatoes, seeded and cut into ¼-inch dice
1 C seeded and diced (¼-inch) ripe cantaloupe
1 C seeded and diced (¼-inch) ripe watermelon
1 C peeled, seeded and diced (¼-inch) cucumber
⅓ C peeled and chopped red onion
1 teaspoon seeded and finely minced jalapeño pepper
2 tablespoon fresh lime juice
2 tablespoon coarsely chopped cilantro
Mix all ingredient together in a bowl. Let rest at least 1 hour before serving.
There will have juice left over once it's eaten. The juice is a perfect marinade for grilled fish.
I prefer to make it with finely diced habañero chile instead of the jalapeño.
