4 each Tomatoes, peel and chop
1 can Chopped green chili peppers
2 each jalapeño peppers, seed & chop
¼ c Chopped green onions
¼ c Fresh chopped cilantro
2 each Cloves of garlic
Juice of 1 fresh lemon
¼ c Vegetable oil
½ teaspoon cumin
⅛ teaspoon Salt
⅛ teaspoon Pepper
¼ teaspoon Dry mustard
Combine tomatoes, chilies, green onions, cilantro, and garlic in a medium bowl. In a glass measuring cup, whisk together remaining ingredients and pour over vegetables. Stir to mix. Cover and chill.
Fresh cilantro and dry mustard make this recipe unusually good.
