Firecracker Salsa

1 20 ounce can pineapple tidbits, drained
1 medium cucumber, diced
1 tablespoon fresh lime juice
1 tablespoon brown sugar
1 pinch salt
1 jalapeño pepper, seeded and minced

In a small bowl mix all ingredients. Cover and refrigerate 6 to 24 hours to let flavors blend.

Serving Suggestion:

Santa Fe Chops

6 boneless pork center loin chops, about 1 ½ inch thick
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon ground black pepper
½ teaspoon salt

Mix together seasonings and spread evenly on both surfaces of chops. Place chops on a kettle-style grill directly over medium-hot coals,lower grill hot and grill for 7 to8 minutes; turn chops and grill for 7 minutes more. Serve with Firecracker Salsa on the side.
