Servings: 2 quarts
7 ripe avocados, peeled, seeds removed and diced
4 morita chiles, rehydrated
2 chipotle chiles, rehydrated
3 limes, halved
2 medium tomatoes, diced
1 tablespoon chopped garlic
1 small red onion, diced
1 jalapeño, diced, seeds removed
1 ½ tablespoon Kosher salt
1 ½ tablespoon ground black pepper
3 dashes chipotle Tabasco Sauce, optional
Soak morita and chipotle peppers in boiling water and set aside for 20 minutes. Put diced avocado in a large bowl. Squeeze lime juice on them and toss lightly. Remove dried chiles from water when cool and cut lengthwise to remove all seeds. Chop chiles into fine dice. Add all other ingredients and toss lightly.
