Servings: About 2 cups
This is a nice accompaniment to grilled meat.
1 cup pineapple, finely diced
½ cup mango, finely diced
1 cup strawberries, hulled and finely diced
1 tablespoon crystallized ginger, minced
2 tablespoons lemon juice
2 teaspoons brown sugar
Combine all of the ingredients in a bowl and mix well. Store in the refrigerator up to two days.
