Peach Cucumber Salsa

Recipe from: Chipper

juice of 1 lime
1 inch piece of peeled chopped ginger root
1 small chipotle pepper in adobo sauce

Pulse in a food chopper until very fine.

5 small, ripe, peeled peaches, finely chopped
1 small unpeeled cucumber (as in young with undeveloped seeds), finely chopped
½ of a small onion, finely chopped
¼ of a red bell pepper, finely chopped

Combine all and stir in:

¼ teaspoon curry powder
¼ teaspoon coarsely ground black pepper

Serve with blue corn chips.
