This is my creation and goes very well with corn cakes or my Hoecakes.
2 roma tomato, chopped
2 medium avocado, peeled, and diced
¼ cup chopped red onion
2 serrano chili, seeded and diced
2 or 3 tablespoons chopped cilantro
juice of 1 lime
salt and pepper, to taste
In a medium bowl mix together the ingredients. Allow to stand while preparing the remainder of the meal.
