Servings: about 3 cups
Try this colorful mix of cucumber, red bell pepper, red onion, and cilantro over grilled salmon or grilled chicken.
2 cups finely chopped cucumber
¾ cup finely chopped red bell pepper
⅔ cup finely chopped red onion
½ cup chopped fresh cilantro
2 tablespoons red wine vinegar
2 tablespoons olive oil
Mix all ingredients in large bowl. Season to taste with salt and pepper. Can be prepared up to 4 hours ahead. Cover with plastic and refrigerate.
