Recipe from: monte
Serve with grilled poultry, seafood or pork.
1 medium papaya, peeled, seeded and chopped
1 small cucumber, peeled and chopped
1 small carrot, shredded
1 small jalapeño chili, seeded and finely chopped
1 tablespoon lime juice
1 tablespoon white vinegar
½ teaspoon sugar
¼ teaspoon salt
Mix all ingredients in nonmetal bowl. Cover and refrigerate at least 4 hours to blend flavors but no longer than 2 days.
Stir salsa before serving.
