Bean Salsa

Servings: 15 to 20

A tasty mixture of beans and peppers. Originally from a friend in Arizona, who got it from a friend and so on.

15 ounce can white corn, drained
15 ounce can black-eyed peas, drained
15 ounce can black beans, drained
15 ounce can white beans, drained
1 red bell pepper, chopped fine
1 yellow bell pepper, chopped fine
2 tablespoons cilantro, chopped
½ red onion, chopped fine
1 jalapeño, seeded and chopped fine
½ 16 ounce bottle wishbone robusto Italian dressing, to taste

Mix all together and refrigerate for a few hours before serving — we like it better the next day.

Note:
I can't remember if the original recipe said to drain the beans, we have just found that we prefer them drained with a little extra italian dressing.
