Spicy Fresh Peach Salsa

This colourful blend of summer flavours pairs perfectly with grilled seafood or chicken, or is simply delicious with some tortilla chips as well.

1 large peach, chopped
3 tomatillos, chopped finely
1 large tomato, chopped
1 small red onion, chopped finely
4 tablespoons pickled jalapeño peppers, chopped finely
1 cup cilantro, chopped finely
1 small red pepper, chopped finely
2 limes, cut in half
salt and pepper

Combine all ingredients in a bowl. Squeeze the cut limes over your ingredients and flavour and with salt and pepper. Taste and adjust seasoning if you'd like. You want might more more lime, or more cilantro. This is nice to make about a day ahead so flavours meld, and will keep for about three days, covered, in the fridge.

Note:
I like things quite spicy, so I highly recommend starting with 1 tablespoon of chopped peppers and going from there.
