Use this salsa to garnish grilled salmon, chicken, etc.
2 peaches, peeled
1 tomato, diced
1 avocado, peeled
1 tablespoon minced red onion
1 tablespoon lime juice
1 teaspoon olive oil
¼ teaspoon salt
¼ teaspoons ground red pepper
¼ cup jícama, optional
Combine all ingredients in a bowl; cover and chill until ready to serve.
Note:
Salsa may have a soggy texture by the second day — best to serve on the day you prepare it.
