This is a quick and easy Pineapple Mango Salsa recipe that is great by itself with a variety of chips . It is also very good when served with grilled chicken or fish.
1 pineapple, cored, peeled and sliced into ¼-inch pieces
2 mangos peeled, pitted, and chopped
1 red bell pepper cored, seeded, and chopped
1 red onion chopped
6 tablespoons chopped cilantro leaves
6 tablespoons olive oil
2 tablespoons honey
2 tablespoon peeled minced fresh ginger
2 jalapeño peppers chopped
2 to 3 limes, juiced
add Kosher salt and ground pepper to taste
Combine ingredients above and store in refrigerator several hours prior to serving. It may be necessary to drain off excess liquids after refrigeration period for the correct salsa consistency. The excess juice makes a very good marinate for the fish or chicken.
