Servings: 4 cups
4 tomatoes, diced
½ fresh chili, diced
2 scallions, chopped finely
2 tablespoons mint leaves, chopped
1 tablespoon cilantro leaves, chopped
1 lime, juice of
3 tablespoons olive oil
3 ounces macadamia nuts, chopped coarsely
1 ripe mango, peeled and diced
1 pinch sugar
salt, black pepper and cayenne to taste
Toast the macadamia nuts lightly in an ungreased frying pan. Combine the tomatoes with chili, scallions, mint, coriander, lime juice and olive oil. Add the macadamia nuts and then the mango. Season with sugar, salt, pepper and cayenne to taste.
