From Oaxaca, Mexico the huachinango chile is large red jalapeño chile from Oaxaca, Mexico. The recipe combines green tomatillos with the red chiles for a colorful salsa.
1 pound fresh tomatillo, husks removed, quartered
1 large garlic clove
½ medium white onion, coarsely chopped
2 fresh huachinango chilies
12 to 15 fresh cilantro stems
1 teaspoon coarse salt
Place all the ingredients in a blender and process until smooth.
