Peach Salsa

2 cups Peach, ripe, peeled and diced
½ cup Onion, red, diced
½ cup Bell pepper, red, diced
½ teaspoon chiles serranos, minced
2 teaspoons Olive oil
2 tablespoons Lime juice
¼ cup Mint, fresh, minced
2 teaspoons ginger, fresh, grated

Combine all ingredients. Let flavors mellow for 30 minutes and serve.
