1 ½ cup flour
1 teaspoon salt
2 teaspoons paprika
6 small fish fillets such as sand whiting or flathead
2 egg whites, lightly beaten
oil for shallow frying
6 long soft bread rolls
⅓ cup mayonnaise
9 lettuce leaves halved
Combine the flour, salt and paprika. Dip the fish into the egg white and then press into the flour.
Heat 2cm of oil in a frying pan over medium heat. Cook the fish for 2 to 3 minutes each side or until golden and crisp. Drain on absorbent paper.
To serve; spread the bread rolls with mayonnaise and top each one with about 3 pieces of lettuce and a fillet of fish. Serve warm, wrapped in a paper napkin.
