Avocado and Tomato Sandwiches with Jalapeno Mayonnaise

jalapeño Mayonnaise
½ cup mayonnaise
3 tablespoons pickled jalapeños, drained and finely minced
1 tablespoon lemon zest, grated
¼ teaspoon salt
⅛ teaspoon coarsely ground black pepper

Sandwich
8 slices whole-grain bread, toasted
1 avocado, ripe, peeled and sliced
1 tomato, sliced
1 cup alfalfa sprouts

Prepare the jalapeño mayonnaise by combining the ingredients in a small bowl. Mix until blended, then spread on 4 pieces of the toasted bread. Arrange the avocado and tomato slices on top, and top with alfalfa sprouts and the remaining bread. Cut each sandwich in half and serve. Note: Pickled jalapeños (sometimes labeled "en escabeche") may be found in Mexican markets and shops that specialize in spicy foods. Minced fresh jalapeños may be substituted for them. These hearty sandwiches are lightly but intensely flavored with the jalapeño mayonnaise. The alfalfa sprouts give the sandwich a nice crunch. Substitute watercress or arugula for variety.
