Servings: 4 sandwiches
½ cup Hellmann's mayonnaise
3 tablespoons chopped parsley
1 tablespoon chopped thyme
1 tablespoon chopped marjoram
1 teaspoon garlic powder
¼ teaspoon fine sea salt
¼ teaspoon white pepper
8 slices toasted country bread
8 red-leaf lettuce
4 slices horseradish cheddar cheese
4 slices thin sliced maui onions
4 ounces thin sliced serrano ham
4 teaspoons unsalted butter
4 jumbo brown eggs
2 sliced heirloom tomatoes
2 peeled and sliced Hass avocadoes
2 pints black raspberries
In a bowl whisk mayonnaise, fresh herbs, garlic powder, salt and white pepper.
Toast bread, spread herbal mayonnaise, add lettuce, cheese, Maui onion and ham.
In a bowl whisk 1-egg, season with salt and white pepper. In a non-stick skillet melt 1-teaspoon unsalted butter fry eggs one at a time. Place fried egg on sandwich, sliced tomato, avocado, lettuce and cover sandwich. Slice sandwich in half and place on a serving plate.
Garnish plates with fresh fruit.
