Tramezzini are small triangular tea sandwiches found in Italian coffee bars. They are made with a variety of fillings, ranging from tuna salad to ham and cheese.
12 slices pancetta
mayonnaise for spreading
8 thin slices white or whole-wheat sandwich bread
4 lettuce leaves
1 tomato, thinly sliced
2 hard-cooked eggs, sliced
Heat a large, heavy sauté pan over medium-high heat. Add the pancetta and fry, turning once, for about 3 minutes on each side, or until crisp. Using tongs, transfer to paper towels to drain.
Spread the mayonnaise on the bread and assemble 4 sandwiches, each with thin layers of lettuce, tomato, pancetta, and egg. Cut each sandwich in half diagonally to form 2 triangles. Serve at once.
