This is a delicious fresh sauce from Rachael Ray. The only change I've made is the addition of red pepper flakes. It's wonderful served over grilled chicken breast, grilled halibut fillet or linguine. Also very good with fresh asparagus.
1 cup arugula leaf
½ cup basil leaves
1 large garlic clove, minced
1 lemon, juice of
⅓ cup extra virgin olive oil
¼ to ½ teaspoon red pepper flakes
salt and pepper, to taste
2 cups tomatoes, chopped and seeded
½ small red onion, finely chopped
In a medium sized bowl, combine chopped and seeded fresh tomatoes with finely chopped red onion. Set aside. Combine the arugula, basil, garlic and lemon juice in a food processor. Season with red pepper flakes, salt and pepper. Stream in olive oil while running processor to form a pesto-like sauce. Toss sauce with tomato and onion mixture.
