Nước Dùng Heo (Light Vietnamese Pork Stock)

Servings: 6 cups

1 pound meaty but lean pork bones
5 white peppercorns
9 cups cold water

Bring the cold water, bones, and peppercorns to a slow boil, then reduce heat and simmer on low, skimming, for 45 minutes. Strain and skim off any fat.
