A recipe for venison sausage patties, made with ground deer meat and ground pork.
1 pound ground venison
2 pounds ground pork
1⅓ tablespoon salt
2 teaspoons black pepper
1 tablespoon sage
1 teaspoon fennel seeds
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon mustard powder
½ teaspoon ground cumin
½ teaspoon cayenne powder
Mix together the ground venison and the ground pork. In a separate bowl, mix the spices together. Once mixed, combine the spices with the ground meats.
Spread out meat on a cutting board, so that it fills the cutting board and is ¼-inch in thickness. Use a cookie cutter to create circular patties. Using a spatula, remove the patties to wax paper.
Cover top of patties with wax paper. Cover and leave in the refrigerator, or place in zipped plastic bags if storing for later use.
