Bratwurst

1 pound pork, coarsely ground
1 pound beef, coarsely ground
2 teaspoons celery seed
2 teaspoons caraway seeds
3 teaspoons lowfat powdered milk
1 egg
2 tablespoons onion powder
salt and pepper to taste
¼ teaspoon lemon rind — grated
3 teaspoons dried parsley
3 tablespoons water

Combine all ingredients in a large mixing bowl and mix well to combine. Let stand for 1 hour then mix well again.

Stuff into casings and fry or bake in a preheated 350°F oven for 35 minutes.
