Cumberland Sausage

Cumberland sausage is a traditional UK sausage.

6 ounce minced pork fatback
1 pound minced shoulder of pork
1 ounce stale breadcrumbs
½ slice minced smoked bacon
pinch salt, pepper, mace and nutmeg
2 tablespoon Wwter
casings

Mix together the shoulder mince and fat mince. Add two tablespoons of hot water to the breadcrumbs. Mix together the mince, breadcrumbs, spices and pepper to taste.

Fill your casings with the sausage meat, it is usual for cumberland sausage to be presented as a single long link coiled into a spiral. Gently prick your sausages and allow to stand overnight in the fridge. Cook or freeze your fresh sausages.
